Buttermilk Cornbread Skillet



Nothing says home like a hot slice of buttermilk cornbread right out of the cast iron skillet-crisp edges, tender middle, and just waiting for a pat of butter.


Ingredients:

  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 11/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup buttermilk
  • 2 tablespoons vegetable oil or melted butter (plus a bit for greasing the skillet)

Instructions:

  1. Preheat oven to 425°F and place a small cast iron skillet inside to heat.
  2. In a bowl, mix cornmeal, flour, baking powder, baking soda, and salt.
  3. Stir in the egg, buttermilk, and oil until just combined
  4. Carefully remove the hot skillet, grease lightly, and pour in the batter.
  5. Bake for 18-20 minutes or until golden brown. Serve hot.
