Nothing says home like a hot slice of buttermilk cornbread right out of the cast iron skillet-crisp edges, tender middle, and just waiting for a pat of butter.
Ingredients:
- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 11/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1 cup buttermilk
- 2 tablespoons vegetable oil or melted butter (plus a bit for greasing the skillet)
Instructions:
- Preheat oven to 425°F and place a small cast iron skillet inside to heat.
- In a bowl, mix cornmeal, flour, baking powder, baking soda, and salt.
- Stir in the egg, buttermilk, and oil until just combined
- Carefully remove the hot skillet, grease lightly, and pour in the batter.
- Bake for 18-20 minutes or until golden brown. Serve hot.
