  • 1/4 cup coconut flour
  • 1/2 cup granulated erythritol or your preferred low-carb sweetener
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil

Instructions:

  1. In a mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt.
  2. In a separate bowl, whisk together the eggs, almond milk, vanilla extract, and melted coconut oil until smooth.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until well combined and a dough forms.
  4. Preheat your air fryer to 350°F (175°C).
  5. Grease a donut pan that fits your air fryer. Evenly distribute the batter into the donut molds, filling each about 3/4 full.
  6. Carefully place the donut pan in the air fryer and cook for 8-10 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
  7. Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
