Red Rice



Nothing brings the taste of the South to your table quite like a serving of red rice-rich in flavor and perfect alongside your favorite dishes.


Ingredients:

  • 1 cup long-grain white rice
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 1 small green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Instructions:

  1. Heat the vegetable oil in a medium saucepan over medium heat. Add the onion and bell pepper, sautéing until softened, about 5 minutes.
  2. Stir in the garlic and cook for another minute until fragrant.
  3. Add the rice, stirring to coat the grains with the oil and vegetables.
  4. Pour in the diced tomatoes and chicken broth, then season with salt, black pepper, and cayenne pepper.
  5. Bring to a boil, then reduce the heat to low, covering and simmering for 20 minutes or until the rice is tender and the liquid is absorbed
  6. Fluff with a fork before serving.
