Ingredients:
- 1 cup long-grain white rice
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 1 small green bell pepper, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
Instructions:
- Heat the vegetable oil in a medium saucepan over medium heat. Add the onion and bell pepper, sautéing until softened, about 5 minutes.
- Stir in the garlic and cook for another minute until fragrant.
- Add the rice, stirring to coat the grains with the oil and vegetables.
- Pour in the diced tomatoes and chicken broth, then season with salt, black pepper, and cayenne pepper.
- Bring to a boil, then reduce the heat to low, covering and simmering for 20 minutes or until the rice is tender and the liquid is absorbed
- Fluff with a fork before serving.
