Vegetable Soup



Warm and hearty, this Southern Vegetable Soup is a delightful way to enjoy a variety of fresh vegetables in a single dish.


Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, chopped
  • 1 large potato, diced
  • 1 zucchini, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup frozen peas

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until onions are translucent.
  3. Stir in carrots, celery, and potato, cooking for about 5 minutes.
  4. Add zucchini and cook for another 2 minutes.
  5. Pour in the diced tomatoes and vegetable broth.
  6. Season with salt, pepper, thyme, and oregano.
  7. Bring to a boil, then reduce heat and simmer for 15 minutes.
  8. Add green beans, corn, and peas. Simmer for another 10 minutes, or until vegetables are tender.
