Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 stalks celery, chopped
- 1 large potato, diced
- 1 zucchini, sliced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 cup corn kernels (fresh or frozen)
- 1 cup frozen peas
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic, sauté until onions are translucent.
- Stir in carrots, celery, and potato, cooking for about 5 minutes.
