There are few things more Southern—or easier to put on the table—than good pimento cheese and something crisp to spread it on.
Ingredients
- 2 cups shredded sharp cheddar cheese
- 1 small jar (4 ounces) diced pimentos, drained
- 1/3 cup mayonnaise
- 2 tablespoons softened cream cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Pinch of cayenne pepper, optional
- 1 baguette or French bread, sliced
Instructions
- Preheat the oven to 375°F.
- In a bowl, combine the cheddar, pimentos, mayonnaise, cream cheese, garlic powder, black pepper, and cayenne.
- Arrange the bread slices on a baking sheet and toast for about 5 minutes.
- Turn the slices over and spoon a generous amount of pimento cheese onto each one.
- Return to the oven for 5–7 minutes, until the cheese is warm and beginning to melt.
- Serve immediately.
They’re warm, cheesy, a little crisp around the edges, and proof that a good Southern snack doesn’t need to be complicated.
